That’s why when I decided to make this drink, I immediately thought of the Grinch. You know – to tie this recipe in with the whole “twelve days of Christmas” theme.
As many of you may be aware, I recently left my day time retail gig and took a job with the federal government as a financial technician. One of my new co-workers is Vietnamese and mentioned this avocado drink that she enjoyed when visiting family this past July. After describing the contents, though, I was not impressed.
At all.
I couldn’t imagine avocado tasting good sweet. Unless I added cocoa powder. And copious amounts of sugar. Making that chocolate avocado pudding that seems to be all the rage. That is, unless you’re my sister, who made her pudding in a blender, and ate it while it was still chunky. Then you might not be a member on the chocolate avocado pudding bandwagon.
But I definitely couldn’t jump on board with just adding milk.
Even if it is sweetened condensed milk.
Until my co-worker made it for me and I enjoyed it so much I went home and made it for Audrey. Complete with a glass dressed like the Grinch.
And now we’re both fans.
So, on the fifth day of Christmas, I’m sharing with you: this Vietnamese avocado smoothie!
So – lesson to self: never judge a book by its cover.
Or a recipe by its list of ingredients.
Vietnamese Avocado Smoothie
- 1 avocado
- 1/4 c. sweetened condensed milk
- 1 c. ice
- 1/4 c. unsweetened almond milk
Slice the avocado in half, pit, and scoop out flesh. Add to blender along with the sweetened condensed milk, almond milk, and ice. Blend together until smooth.
Serve in a cute Grinch-inspired glass, top with whipped cream, and a strawberry Santa hat.
Or, just drink it.
