This is all I really want right now.
Even if it is almost midnight.
Mainly because it’s snowing and seems right, but also because it’s the best darn coffee drink ever.
You see, I tend to gravitate towards holiday themed drinks and start drinking pumpkin spice lattes well before I should. This generally has me counting down the days until they bring out the peppermint mochas. And then that’s all I drink. All day. Every day. I’m pretty sure my spending on coffee this month has doubled. Even though my budget has not.
But now that I’ve re-created this coffee beverage at home – I should be right back on track.
I used the same base I have for all my other lattes: 1 cup of strongly brewed coffee and 1.5 cups of unsweetened almond cashew milk.
But this drink has the addition of chocolate and mint.
AKA: This drink has the addition of the most magnificent flavor combination. Especially for the holidays.
But it has minimal sugar. Which is always great. Because I’ve started the yearly holiday baking and may or may not be gorging on holiday cookies around the clock. Because no one ever said you couldn’t eat dessert for breakfast. Lunch. AND dinner. Although, I probably wouldn’t recommend it.
But I will recommend this drink.
So, on the seventh day of Christmas, I’m sharing with you: a peppermint mocha
Peppermint Mocha
serves 1
- 1 c. strongly brewed coffee
- 1 1/2 c. unsweetened almond cashew milk
- 1 tbsp. cocoa powder
- 1/2 tsp. peppermint extract
- 10-20 drops of liquid stevia
Place everything in a small saucepan, and heat up thoroughly, ensuring not to burn the milk. Pour into a mug, and garnish with whipped cream, crushed peppermint candies, and chocolate shavings. Or forget the toppings and begin drinking. Immediately.
And now I want this. Iced.
