Let’s think of the sweetest way to spread some holiday cheer!

And make some of these muddy buddies at your next holiday gathering!

Candy canes are such a quintessential holiday sweet, I just knew that combining them with white chocolate and Chex cereal was going to be great.  However, I also knew that I wanted to limit the amount of sugar in this recipe because I tend to not control myself when it comes to cookies.  And chocolate.

And just about every other indulgence this holiday season has to offer.

So, I lightened up the recipe using my vanilla protein powder + powdered erythritol coating and it didn’t disappoint.  Not one bit.

Also, choosing to use the crushed up candy canes I had leftover from my week long peppermint mocha binge (recipe coming soon) was so much better than my original thought of flavoring the white chocolate with peppermint extract.  It makes the treat visually festive as well as adding that peppermint punch I was searching for.

If you guys are uncertain what erythritol is, it’s a sugar alcohol that contains about 60-80% of the sweetness of table sugar.  However, this sugar substitute has 0 calories because the body doesn’t absorb it, so for those who are diabetic, it will not affect blood sugar or insulin levels, and it has zero bitter aftertaste, unlike other sweeteners – like Stevia.  However, this sugar substitute can cause digestive upset when consumed in large quantities – which is why I prefer to do a 1-1 ratio of erythritol & protein powder instead of coating the sweets in pure powdered erythritol.  [Keto Connect recently did a sugar comparison which was extremely interesting if you want to check it out.]

You can still use powdered sugar to make this recipe – it just may be slightly sweeter.

But is that necessarily a bad thing?

So, on the fifth day of Christmas, I’m sharing with you: candy cane muddy buddies!

Candy Cane Muddy Buddies

  • 5 c. Chex cereal
  • 10 oz. white chocolate melting wafers
  • 1 c. crushed candy canes
  • 1/4 c. powdered erythritol
  • 1/4 c. vanilla protein powder (I use Isopure in Creamy Vanilla)

Measure out 5 cups of Chex cereal into a large mixing bowl and set aside.

In a double broiler, melt your white chocolate.  You can easily put the white chocolate in a microwavable bowl and microwave in 15 second intervals until completely melted.

Pour melted white chocolate over Chex cereal until evenly coated.  Pour in candy canes and mix until candy canes are evenly dispersed.

In a gallon Ziploc bag, add the powdered erythritol and vanilla protein powder.  Scoop the cereal mixture into the bag, and shake until evenly coated with the coating mixture.

Pour the muddy buddies out onto baking sheet and allow to rest for about 30 minutes until the chocolate hardens and the mixture is crispy.
