I didn’t even know this was a thing!

I was just sitting there reading through the blogs I follow and saw one of my favorite bloggers do a cheesecake filled strawberry.  My mind was blown.  I just had to do my own version.  Except I wanted chocolate.  And sprinkles, of course.

I figured this is my fancier version of a chocolate covered strawberry.

It might just be the most adorable way to eat your fruit.

And honestly, the recipe is so embarrassingly easy I don’t know why you wouldn’t make these yourself.

I wanted a pretty no-fuss cheesecake center, so the cheesecake filling only has four ingredients.  And then the strawberries.  That’s it.  5 ingredients.  Oh, and sprinkles.  Got to have those sprinkles.

Okay, so maybe you don’t.  But don’t they just scream FOURTH OF JULY with them?  Or at least SUMMER!

Chocolate Cheesecake Stuffed Strawberries

serves 36

  • 36 strawberries
  • 4 oz. cream cheese
  • 1/4 c. powdered sugar
  • 2 tbsp. unsweetened cocoa powder
  • 2 tbsp. unsweetened cashew milk, or milk of choice
  • Fourth of July sprinkles

Hull the strawberries and then cut a tiny sliver from the bottom of the berry, so they stand upright.

In the bowl of your stand mixer, cream together the cream cheese, powdered sugar, cocoa powder, and cashew milk.

Once creamed, scoop the mixture out and put it into a pastry bag with a large star tip.  Pipe the filling into the strawberries and top with sprinkles.

Refrigerate until you are ready to serve!

 

 

 

I think you might even be able to call these deviled strawberries, eh?
