Jalapeno sausage & corn pizza. Odd sounding, right? How about if I tell you that there’s also salsa on it. Still with me?
You should be. Because this pizza is delicious. Like I stated in my previous post, that’s what makes making pizza at home so great – you can put anything on it. This one has a bit of a southwest feel – a whole wheat pizza crust topped with salsa and loaded with Jack Link’s jalapeno sausage, corn kernals and two types of cheese prior to being baked.
I finished ours off with a drizzle of hot sauce, but obviously you can forgo that option if you’re serving this to those sensitive to spicy foods (although the combination of salsa and sausage pack a little bit of a punch – it’s fairly mild).
After a few bites, Frank exclaimed that “this is definitely a keeper”. And I agree. Especially since I plan on doing pizza every Friday night. Obviously I’m not going to bore you with the plain Jane cheese pizzas or the all American pepperoni pizza, but I’ll definitely share some unique combos. How about eggplant parmesan pizza, a Mexican style pizza, or a simple white pizza?
Jalapeno Sausage & Corn Pizza
makes 1 12-inch pizza/serves 4 * total cost: $6.20 * cost per serving: $1.55
- 1 serving of whole wheat pizza crust – $0.97
- 1/2 c salsa – $0.76
- 2 Jack Link’s jalapeno sausage, roughly chopped – $1.49
- 1 c frozen corn, thawed – $0.49
- 3/4 c shredded cheddar cheese – $1.49
- 1/4 c shredded mozzarella cheese – $0.44
- 1/4 c chopped green onions – $0.44
- 1 tbsp hot sauce – $0.12 (optional)
Preheat the oven to 475 degrees F.
Grease your pan with non-stick spray and sprinkle some corn meal on top of the spray. Flatten your pizza dough to a 12 inch circle and pinch edges to create the standard pizza crust look. Carefully transfer the pizza dough to your prepared pizza pan. Brush the edges of your pizza crust with olive oil to ensure it browns up during the baking process.
Spread the salsa evenly over the pizza crust (avoiding the edges) and then top with sausage, corn and both cheeses. Bake for about 15 minutes or until golden brown and the cheese has melted.
Remove pizza from oven and top with chopped green onions and drizzle with hot sauce. Serve hot!
