Neapolitan Nice Cream

I have a problem.  A big problem.  I like sweets way too much.  I mean, I know I’ve always had a problem liking my desserts – heck, my parents tell me that when I was younger, I would stop eating dinner, JUST so I could save room for dessert.  Now, I’m not willing to sacrifice my meals but I STILL want something sweet afterwards.  I’ve been known to eat an entire pint of ice cream in one sitting…I’d probably eat a quart of ice cream in one sitting, but I refuse to purchase that large of a quantity for fear that it might actually happen.

I did, however, just purchase a couple of those Arctic Zero frozen desserts and didn’t feel nearly as guilty as eating the entire pint in one sitting.  I mean, that’s what they are made for, right?  For those of us who have absolutely no self-control when it comes to desserty goodness!  Unfortunately they are pricey.  Too pricey.  I’m talking $10.00 for the two of them.  That’s a little out of my price range, especially because I decided to become a stay-at-home mom for the time being and we’re living off of one income.

I guess it’s a good thing I’ve decided to start buying massive amounts of banana bunches and freezing them.  Not only were they a great addition to my protein shakes (which I’ve currently given up in replacement of Shakeology), but I’m also able to make “nice cream” anytime that sweet tooth strikes (which is literally all the time).  Since I’m no plain-Jane, I decided to spruce it up some and make a Neapolitan version – and trust me, it did not disappoint.


Neapolitan Nice Cream

“Vanilla” layer:

  • 1/2 c frozen bananas
  • 1 tbsp unsweetened cashew milk

Strawberry layer:

  • 1/2 c frozen bananas
  • 1/2 c strawberries

Chocolate layer:

  • 1/2 c frozen bananas
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp unsweetened cashew milk

Optional: semi-sweet mini chips

Place ingredients for vanilla layer in food processor and process until creamy.  Scoop into dish.  Repeat with strawberry layer (this one ended up making way more than I needed, so half of it was placed into a container and put in the freezer for another day – probably after dinner tonight).  And then repeat with the chocolate layer.  Sprinkle with semi-sweet mini chips if you want!
